A flamenco morning
Guests are welcomed in the Patio de Columnas and are offered a light breakfast in the Patio de Montera. Afterwards, they are taken to the Sobrao, a flamenco tablao, where a guitarist, a flamenco singer and two dance teachers await them.
The class begins by getting to know the rhythm of the dance to be taught (Taconeo / Zapateado Techniques, Arm Techniques, Hand, Arm and Foot Coordination and Sevillanas Choreography.

Workshop "Elaborate your sherry".
In our wine-growing area we make fortified wines based on a process that makes them unique and unrepeatable: a system of ageing and crianza using criaderas and soleras in which wines of different ages are combined, older as they go down the scale, until they reach the solera, which contains the oldest wine. The miracle of the “velo de flor” takes place inside the sherry casks, a yeast that covers the surface and transforms it to give it the typical aromas and flavours.
The aim of the workshop is for the apprentice to learn about the different sherry wines in their different stages of ageing and to make the blends (or cabeceos, as they are called in the winemaking vocabulary) until they reach the wine that most satisfies them.

Dynamics
Guests are welcomed in the Patio de Columnas and offered a light breakfast in the Patio de Montera. Afterwards, they will be taken to the Salón de Consejos to start the workshop.
We will provide the participants with utensils so that they can do the tests they deem appropriate until each one makes his or her own formula.
With the final samples prepared by the participants, a final blind tasting will be carried out, using tasting sheets to choose the best sherry of the session.
The jury will be made up of the attendees themselves and the oenologist. This is an educational, fun and participative activity.
Spanish cooking workshop
Cooking is always an exciting way to immerse yourself in the gastronomic culture of the region, learn how to cook traditional dishes and taste delicious Spanish food, all while enjoying a friendly and educational environment.
This is a practical and enriching experience where participants will learn to cook authentic Spanish dishes under the guidance of an experienced chef or instructor.

We will provide the participants with utensils so that they can make the tests they deem appropriate until each one prepares their own dish.
With the final dishes prepared by the participants, a final blind tasting will be held to choose the best dish of the session.
The jury will be made up of the participants themselves and the chef. This is an educational, fun and participative activity.
Secret Visit
If brandy were a place, it would be a cellar; if it were a sound, it would be silence. We want to transport you to the magic of a walk in semi-darkness, lit only by a few rays of sunlight that, after filtering centenary esparto grass, make up the tonality of the boots. We will walk through the streets of andanas and courtyards, we will tread on the sand, and we will cover ourselves with beams, tiles, fig trees and vines to receive in our souls the history of a palace and of a forgotten, calm, friendly drink, which patiently awaited to be rescued from its lethargy. This is the story of the Palace. And of our Brandy E.

11:15 h. – Departure to the winery where the visit will take place.

Dynamics
The only thing guests will know about our Secret Tour is that it starts at the Palace, from where they will walk through the most flavourful streets of Jerez.
Once in the cellar, after entering through a private door, and with no other elements than a wine glass and a few glasses, they will see the differences between brandies of different origins, ageing systems and ages, from holandas to centenary brandies, only reserved for those who have been granted the privilege.
Finally, they will return to the Palace, where the experience will come to an end and lunch will begin.
